Hello everyone! I am slowly adding my recipes to the blog and hope you all try them out today. The other day I made a very Spicy Chorizo Pasta (that I put way too much chilli in) but it was delish!
Love some parmesan cheese!
Serves 2!
Ingredients
1 x packet of pasta of your choice (I just used what was in the pantry - both white and wholemeal pasta was in this)
Half a can of passata (or any pasta sauce)
2 x chorizo sausages - I used Miguel Maestre's
2-3 cloves of garlic
A handful of cherry tomatoes (or a big tomato diced)
1 x brown onion
1 x green capsicum
1 tsp turmeric
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp chilli
A dash of lemon juice
Salt
Pepper
Cheese (grated)
Parmesan cheese for decoration
Oil and Butter for frying
Fresh parsley (for decoration - optional)
Method
Step 1: Bring a saucepan of water to the boil and leave until you are ready to add the pasta.
Step 2: Prep your veges! Chop the garlic and onion and brown off in a frying pan with some oil and butter. While browning, chop your chorizo into small slices, then add to the fry pan and cook (about 7 mins each side or until nice and brown). While browning, chop your capsicum and any other veges you want to add in.
Step 3: Once the chorizo is cooked, add in your chopped capsicum then put your pasta into your boiling water and simmer (usually about 11-12 minutes - follow the instructions on the packet and add 1-2 minutes to get the perf al dente pasta). Add salt to the boiling water.
Step 4: Add in your passata/pasta sauce to your frying pan (make sure you've already turned the heat down once the meat is cooked), then add in the cherry tomatoes (chopped in half), a dash of lemon juice, salt, pepper, chilli, paprika, cayenne pepper, and turmeric. Simmer until the pasta is cooked.
Step 5: Once your pasta is cooked, drain out the water and add to the fry pan and mix into the pasta sauce. Add a bit of grated cheese at this stage. Take off the heat and let sit for about 2 minutes.
Step 6: Serve on your plates and add some parmesan cheese and parsley (optional). You could also add in some extra chilli flakes if you want to make it extra spicy.
