Kia Ora friends and whanau! Last night Luke and I made Nachos for din dins. They were delightfully delicious so I thought I'd share the recipe with you all (it was mainly just a few general nachos items and whatever else we had in the pantry). I did originally try and film it but I got a bit self-conscious and overwhelmed so I'm going to work my way back up to filming eventually. So feel free to try this out at home too!
Serves 2-3
Ingredients:
1 bag of corn chips of your choice (we used Tostitos Mild Mexican Salsa). Doritos also work too
500 grams beef mince (for a vego option, meat-free mince or just add more beans)
1 can of beans (we used a 3 bean Mexican Mix)
1 jar of salsa (you choose the heat you would like OR if you're fancy, make your own)
1/2 yellow capsicum
1/2 green capsicum
1 onion. We used a white onion but I think a red onion would have been better
2 cloves garlic
A few small tomatoes or a small amount of Passata Sauce (Luke put in the Passata)
Some cooking oil
Cayenne Pepper
Paprika
Salt and Pepper to taste
Cheese (Grated), we used a mozzarella and parmesan mix
Guacamole
Sour Cream
Optional: Jalapenos (I added at the end step)
Instructions:
First, you will need a baking tray for the corn chips, line it with al foil and baking paper, then set it aside (we will come back to this later)
Then you want to get a frying pan, heat this up (about a medium heat) with some cooking oil
Crush your garlic, dice your onion, and fry off until brown
Once the onions are brown, add in the mince, turn the heat up a little if needed, then brown this off (usually about 3/4 before you add the rest of the ingredients). I tend to use a wooden spoon to stir
While the mince is browning, lay out your corn chips on your baking tray with a sprinkle of grated cheese, and preheat your oven to 180 C (or 160 C fan forced, I think it's around 375 F but you will need to look it up if you don't use the metric system), then heat your corn chips for about 10 minutes or until you can smell them. It sounds weird I know, but trust me, you can smell them! The pre-heat doesn't have to be too long, I only did a couple of minutes.
Add in your bean mix, salsa, and capsicum to the mince mix frying, stir for about 5 minutes
Add in your spices - paprika, cayenne pepper, and salt and pepper to the mince, and give it a good stir. Add in your tomatoes or passata at this step to bring out the taste a little more
Cook until brown and delicious (total time 20 - 30 minutes from raw)
Take corn chippies out of the oven, then place onto two plates. Add a little bit more grated cheese so that it melts over the chippies!
Take the mince off the heat once cooked, let sit for 2 minutes, then serve over the corn chips
Add MORE (there's never enough cheese) grated cheese to the top, let this melt (only takes like 30 seconds), add some jalapenos here if you like too, then add a dollop of guacamole and a dollop of sour cream

Alternatively, you can place all the mince mix over the corn chips on the baking tray and put in the oven for 5 minutes with some cheese to brown it off and then add your guac and sour cream!
